Production region: Lessinia Area, between the provinces of Verona and Vicenza.
Alcohol: 12 % vol.
IN THE CELLAR
Vinification: the white vinification takes place into inox steel tanks at controlled temperature.
The base wine rests until the “tirage”, when the second fermentation takes place in the bottle.
The wine remains on its yeasts for approximately 36 months.
AT THE TABLE
Organoleptic characteristics: Light yellow colour; fine and persistent perlage, a creamy foam
with delicate aromas of citrus fruits and yeast; on the palate it is particularly fresh and mineral.
Food pairings: Excellent as aperitif, it pairs perfectly with fish dishes, in particular with
the regional dish “baccalà alla vicentina” (salted codfish).
